The Secret to a Filling and Healthy Salad


When trying to eat well, salads are always a solid go-to dish but having a few lettuce leaves can be less-than-filling. That’s exactly why a bean salad with whole grains is the perfect satisfying summer lunch.

 

Not only is it hearty but also it’s also full of antioxidants, and vitamins that are kind to sensitive skin. The bell peppers, olive oil, tomato and avocado collectively fill this dish with vitamin E, healthy fats, and lycopene, which can help eliminate skin-aging free radicals.

 

Finally, a cup of faro – a delicious whole grain that’s popular in Italy and available in most large supermarkets — adds a boost of whole grains and fiber that can help take down inflammation in the body and skin. Black Bean and Corn Salad

 

INGREDIENTS
1 14-ounce can black beans, drained
1 14-ounce can sweet corn, drained
1 cup farro, cooked
1 shallot
1 pint cherry tomatoes
1 avocado
2 yellow, orange or red bell peppers
1/4 cup olive oil
Sea salt
Fresh ground pepper

 

DIRECTIONS
Cook the farro according to the package instructions.  Dice the bell peppers, shallot and avocado. Slice the cherry tomatoes in half. Mix all the ingredients together in a large bowl to combine and season with salt and pepper as desired, and serve.
