Easy Farro Salad: Green Lunch on the Go

Whether you live in a big city or a small town, one of the toughest challenges each week is finding time to cook.  

Sure, we all love home-cooked meals, but many of us get so wrapped up with our daily to-do list that we have trouble carving out enough time to make a healthy, nutritious, homemade meal. This is especially true if you work long hours, or if you’re just very busy.

So here’s the solution: Make an easy, on-the-go lunch that you can whip up on the weekend or at night.  Its vegetarian, packed with vitamins (like vitamin C), nutrients, and whole grains, like farro, a mulled wheat that’s packed with anti-inflammatory nutrients. So, not only will it help your health, it will help your skin look beautiful too. 


Easy Farro Salad Recipe
1 Serving


1 1/2 cups water
1/2 cup farro
1/2 yellow bell pepper, diced
1 pickling cucumber, diced
1 shallot, diced
1 plum tomato, diced
2 tbsp fresh parsley, chopped
2 tbsp fresh mint, chopped
1/3 cup crumbled goat cheese
1/4 cup extra-virgin olive oil
1 tbsp white wine vinegar
2 tsp lemon juice
Freshly ground black pepper


Cook the farro in water according to the package instructions and allow it to cool. Drain farro of any excess water, and add the cucumbers, onion, tomato, parsley, mint, goat cheese, olive oil, vinegar, lemon juice, salt, and pepper. Toss well and serve cold or at room temperature, and don’t forget to enjoy!
